Eggless recipe for “super moist” vanilla cupcakes doesn’t even call for milk or butter
This recipe passed the kid test in our house and if that's not singing its praises then I don't know what is.

Here is an easy cupcake recipe that will surely be a hit for any occasion, or even just for a get-together with family and friends.

There are times when we need to prepare desserts that our friends and family will enjoy.

And, deciding what to prepare can be a little challenging.

This is a no-guess work recipe.

Super Moist Vanilla Cupcake Ingredients:

  • 1 ½ cup (210 g) All-Purpose Flour
  • 3/4 cup (150 g) Granulated Sugar
  • 1 tbsp (12 g) Baking Powder
  • 1/8 tsp (pinch) Salt
  • 1/3 cup (75 ml) Vegetable Oil
  • 1 cup (250 ml) warm water 90-110oF (32-43oC)
  • 1 tbsp (15 ml) Vanilla Extract

Start by combining the dry ingredients.

Using a sifter on top of a clean bowl, carefully sift the all-purpose flour to remove lumps.

In the same bowl, add sugar, baking powder, and salt.

Using a whisk, combine all these ingredients completely. When you are done, set the dry mixture aside.

Mix the liquid ingredients.

Prepare the right amount of vegetable oil and water.

Prior to mixing these two ingredients, make sure to check the temperature of your water.

It must be at 90-110F (32-43C).

Add the vanilla extract to the mixture of oil and water. Combine the three ingredients thoroughly.

At this stage, you may now add the oil mixture to the dry ingredients.

Add the oil little by little.

Make sure to do this process slowly as your goal is to avoid too many lumps to make sure all the ingredients are mixed well.

Continue to mix while pouring and do this until there are no more lumps.

Carefully transfer mixture to a piping bag.

Prepare the piping bag and place it inside a glass like a lining.

You can use a glass to make sure that the piping bag stays upright while pouring the mixture into it.

Now that you already prepared your cupcake mixture, line the pan with a cupcake liner.

For this video, the baker uses a white cupcake lining. However, you can also find more liner designs to suit the occasion.

Pipe the mixture into each liner.

Fill each cupcake liner until half full. This will avoid the cupcake mixture to overflow when it rises in the oven.

Place the cupcakes inside the oven and bake them at 350F (180C) for 18-20 minutes.

When done, take out the cupcakes from the oven and place them on a cooling rack.

And that’s it. You can now enjoy your super moist and warm cupcakes.

You can see from the video that the cupcake looks super moist and delicious.
